Omita Khar Recipe

Omita Khar (Papaya Khar)

Ingredients:

  • 1 medium green papaya (peeled and cut into small pieces)
  • 2-3 tbsp liquid kol khar (or a pinch of baking soda dissolved in water)
  • 1 tbsp mustard oil
  • 2 garlic cloves (crushed)
  • 1-2 green chilies
  • Salt to taste

Method:

  1. Heat mustard oil in a pan. Add the crushed garlic and green chilies.
  2. Add the chopped papaya and salt. Sauté for a few minutes.
  3. Pour in the liquid khar and mix well.
  4. Cover the pan and cook on low heat until the papaya becomes completely soft and mushy.
  5. Serve warm with a drizzle of raw mustard oil as an appetizer with rice.

Maasor Mura Di Khar (Fish Head Khar)

A delicacy made by combining fried fish head, typically of Rohu or Bhokua fish, with vegetables like gourd (pani lau) and alkaline khar.
